Oregon State University has received $2 million from the U.S. Department of Agriculture to study ways to keep organic potatoes from spoiling, according to Oregon Public Broadcasting’s KLCC [6]. The Pacific Northwest has a $2.2 billion potato industry, and nationwide, organic food sales topped $60 billion in 2022 and the market continues to grow. OSU College of Agricultural Sciences researchers are tasked with figuring out how to prevent stored spuds from rotting without using chemicals.
